Ingredients:
For the Bolognese sauce:
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 carrot, finely diced
1 celery stalk, finely diced
500g (1 lb) ground beef (or half beef, half pork)
400g (14 oz) canned diced tomatoes
2 tbsp tomato paste
½ cup beef broth (or red wine for extra depth)
1 tsp dried oregano
1 tsp dried basil
1 bay leaf
Salt and black pepper to taste
1 tsp sugar (optional, to balance acidity)
½ cup whole milk (optional, for richness)

400g (14 oz) spaghetti
Salt (for boiling water)
Grated Parmesan cheese (for serving)
Fresh basil or parsley (for garnish)
Instructions:
Sauté the veggies: Heat olive oil in a large pan over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until softened (about 5 minutes).
Brown the meat: Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Simmer the sauce: Stir in tomato paste, diced tomatoes, beef broth (or wine), oregano, basil, bay leaf, salt, pepper, and sugar. Bring to a boil, then reduce heat and let simmer for 30-45 minutes (the longer, the better). Stir occasionally.
Add milk (optional): Stir in milk and let simmer for another 10 minutes to make the sauce creamy and rich.
Cook the pasta: While the sauce simmers, cook spaghetti in salted boiling water according to package instructions until al dente. Drain and set aside.
Combine & Serve: Toss the spaghetti with the sauce or serve the sauce on top. Garnish with Parmesan and fresh basil/parsley.
