2 large eggs
1 cup (240ml) whole milk
½ cup (120ml) vegetable oil
2 tsp vanilla extract
1 cup (240ml) boiling water
Instructions
1. Prepare Oven and Pans
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans (or line with parchment paper).
2. Mix Dry Ingredients
In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
Stir in sugar until evenly combined.
3. Mix Wet Ingredients
In a separate bowl, whisk eggs, milk, oil, and vanilla.
Slowly add wet ingredients to dry ingredients and mix until smooth.
Carefully stir in boiling water (batter will be thin – that’s normal).
4. Bake
Pour batter evenly into prepared pans.
Bake 30–35 minutes or until a toothpick comes out clean.
Cool 10 minutes in pans, then remove to wire racks to cool completely.
5. Frost and Serve
Spread chocolate ganache or buttercream between layers and on top.
Decorate with chocolate shavings, sprinkles, or fresh berries.
